Fig Truffles

Here is a little treat I like to describe as nice on the inside, and naughty on the outside. I will be making loads of these for Christmas, but for now they are a great little sweet nibble to have after dinner time to curb any cravings. They are full of healthy things on the inside, but one does need to treat herself from time to time, hence the chocolate outside!

Fig Truffles

Ingredients;

  • semi dried figs, 130g
  • Chia seeds, 2 teaspoons
  • Coco Powder, 1 Tablespoon
  • Dessicated Coconut, 1/2 Tablespoon
  • Ground Almonds, 2 Tablespoons
  • Grapeseed Oil, 3 teaspoons
  • pinch salt
  • Maple Syrup, 1 teaspoon
  • 70g of milk melting chocolate, 70g of white melting chocolate (could use dark instead if you prefer)

Method;

In a food processor, blend all ingredients together except for melting chocolate until combined and smooth. If you need a little more liquid at another teaspoon of maple syrup.

Roll using the palm of your hands into small little balls, this will give you about 12/13 truffle sized balls. Place in freezer for 10-15 minutes too cool.

Then take your melting chocolate and microwave in 10 second increments until chocolate is melted. Take truffle balls and dip into melted chocolate, turning so that they are evenly coated in a  generous layer of chocolate. If you truffle balls are not cool, the chocolate can begin to fall off your truffle and surround your truffle like  a mini moat, don’t worry, it still tastes good!
