This is not as greasy or heavy as stir fried rice. It is loaded with flavour though. I like to eat this on top of a bed of spinach, so that I get a good dose of fibre.
Ingredients:
– 1 teaspoon soy sauce
– 1 tablespoon rice bran oil
– 1 yellow capsicum
– 4 rashers bacon, diced
– ½ cup peas
– ½ cup frozen corn
– 1 cup cooked quinoa (I prefer to cook mine in a rice cooker for perfect texture)
– 2 eggs
Method: In a large deep fry pan cook your bacon until just cooked, then add your 2 eggs and cook until whites have just turned white and there is no runny clear egg left. Put the lid on the fry pan so the top of the egg cooks even with the bottom. Once the top has no clear liquid add in your veggies and then gently drizzle over your oil and toss lightly so that the egg brakes apart and then add your quinoa and add your soy sauce and toss lightly so everything is evenly combined. You can taste at this point and add more soy sauce if you like or cook another egg on top to mix throughout if you like more egg in your rice.
