Gluten, Dairy & Refined Sugar free Snickers Slice!

I made those while trying to kick and reduce my sugar habit. It is delicious, and as the name says, it is inspired by the snickers bar.

You will need;

Base;

  • Cashew Nut flour 100g
  • Almond Flour 110g
  • Oat flour 85g
  • desiccated coconut 85g
  • Manuka Honey 1/4 cup
  • Coconut Oil 40g
  • Vanilla Essence 2 teaspoons
  • Vanilla paste 1 teaspoon
  • LSA mix 20g
  • Maple Syrup 1 Tablespoon

Put all ingreidents together in a food processor and mix until it comes together almost like a dough. Take a baking tray that you would use to cook slices in, layer with baking paper and take mixture and firmly and evenly press down until evenly distributed.

 

Caramel Sauce;

  • Coconut Oil 85g
  • Sultanas 240g
  • Maple Syrup 1 Tablespoon
  • Vanilla Essence 2 teaspoons

Blend together in a food processor until it comes together and all the ingredients are evenly combined. All the sultanas should be broken down and it should look like a thick brown paste. It should smell like caramel sauce too! Give it a quick taste test and add a little more maple syrup if you would like it sweeter but don’t go too far or you will lose your sauce like consistancy. Once you have it fully and evenly blended together, take a spoon and evenly spread it over your base so it is completely covered.

Chocolate peanut topping;

  • 285g salted peanuts
  • 80g Cocoa Butter
  • 1/2 Tablespoon coconut oil
  • 2 Teaspoons Vanilla Essence
  • 1 Teaspoon Organic Coconut Syrup
  • 1 Teaspoon + 1/2 Tablespoon Maple Syrup ( this is the perfect combo)
  • 4 Tablespoons coco powder

 

Next take 285g of salted peanuts and sprinkle over your caramel sauce.

Take your cocoa butter and melt in the microwave, take your coconut oil and add to hot cocoa butter mixture and melt together. Add coco powder and rest of ingredients and slowly mix together to make chocolate, you can add again a little more vanilla essence or maple syrup if you want to make it sweet, even some vanilla bean paste if you like, just be careful again or it will not harden in the fridge if you add to many liquids. 

Take this mixture and pour on top of slice and then refrigerate for several hours until hard. Once it is fully hard you can take it out of the fridge and slice!
