Spinach, Herb and Cream Cheese Scrambled Eggs

So I am on day one of trying to do low carb seriously. I would like to try it for 30 days.

Below is a keto scrambled eggs recipe that I had for dinner. It of course would be perfect for breakfast too, but I was tired and in a mood to have something simple and quick. I also added mine with some prosciutto and drizzled a little tomato sauce on top.

Ingredients:

  • 5 small eggs or 4 large eggs
  • 50g cream cheese
  • handful of baby spinach or 3 English spinach leaves
  • 1/2 tablespoon dried chives
  • 1/2 tablespoon dried parsley

Method:

Chop up your spinach leaves and place in your saucepan that you will scramble you eggs in. Then add all the other ingredients and whisk and mash together with a form. Once this is evenly blended and the cream cheese is broken up then you can begin to cook on the stove stirring every so often so it does not all stick to the bottom of the pan.
