I had a lot of bananas to that were soooo ripe you could only use them in some sort of baking. So I thought I would make some pikelets/ pancakes. I had wanted to use wholemeal flour but unfortunately I had none so had to do some quick thinking to make them healthier. I then realised I could up the fibre with the wheat germ and quinoa flakes I had in my fridge, and this is what I came up with. Let me know what you think!
Makes 22
Ingredients:
– 1 cup Self raising flour, unbleached
– 1 egg
– 1 1/4 cup of milk
– 1/4 quinoa flakes
– 1/4 cup stabilised wheat germ
– 1/2 Tablespoon baking powder
– 250g Overripe bananas, the browner the better
– 2 normal bananas, chopped
Method:
Mix all dry ingredients together in a bowl. Create a well in the centre and add milk, mashed bananas, egg and mix together until you have a sticky batter. Once mixed, add chopped bananas and mix together until just combined.
Add dessert spoon sized dollops to a medium heat pan and cook until golden brown one side, then turn until other side is golden brown. These will be very thick and puffy pikelets ( or pancakes if you make them bigger) because of the chunky banana and baking powder. This is to keep it light from all the heavy quinoa flakes and wheat germ.
Eat plain or drizzled with honey or maple syrup and favourite fruits.
