Apple, Pear & Honey Pie!

Perfect for the winter chill or if you are like me and have Christmas in the summer time this will instantly remind you of Christmas to come and a warm balmy night.

It tastes so delicious and has very little sugars (coconut sugar and honey is all that is used). Perfect with Ice Cream, cream or for a super healthy version good plain yoghurt. I kept the skin on for this recipe to keep the fiber up but you can remove it if you want.

Ingredients:

Filling

-3 pink Apples 
– 2 pears
– 1 green Apple
– Rind of 1 lemon
– 2 Tablespoons of runny honey
– 1/2 Teaspoon of Cinnamon
– 3 pinches of mixed spice
– 35g salt free butter, melted
– 2 Teaspoons Vanilla essence
– 2 Cinnamon sticks
– 3 pinches of Nutmeg

Topping

– 90g of Oates
– 45g Desiccated coconut
– 20 Coconut sugar
– 1/2 Teaspoon Cinnamon
– 1/2 Tablespoon Honey
– 25g Unsalted Butter 


Method:

Chop pears and apples in slices, not quarters or anything just straight slices all the way through. Then take out the core of any slices that have the middle. Mix all the ingredients of the filling together in a bowl and mix thoroughly until apples and pears are completely covered. 

Fill in a oven proof dish and then take all your topping ingredients and mix together in a separate bowl until completely mixed together. The sprinkle on top of your oven proof dish and press down so it kind of looks like you have a giant anzac or oatmeal cookie on top. Then cover with foil or a lid that comes with your oven proof dish.

Cook until just brown on top, then remove lid and cook for another 2-3 minutes just so the topping is crispy. Serve warm with icecream, cream or good plain yoghurt.
